Babà – the classic Neapolitan dessert, light and airy sponge cake, soaked in an aromatic rum bath. You will not find this anywhere else in London
AKA rum baba or baba au rhum, closely related to the Savarin and to the the babka, a Polish yeast cake. The word babka is diminutive for baba, meaning old woman or grandmother in Slavonic languages. However, the babà as we know it today goes back to the early 18th century and to the exiled Polish king, Stanisław Leszczyński and his pastry chef, Nicolas Stohrer, who created the babà much like the one we know today
